Substitute halibut, mahi mahi or swordfish for the tuna.

Be choosy: a reddish color is acceptable, but flesh with dark spots or streaks should be avoided. As with all great ocean fish, the flesh tends to be dry.

Marinate with oil whenever grilling, and avoid overcooking. The timing is critical, as tuna should be served medium rare. Use a kitchen timer.

The easiest method to grill tuna steaks is by pan grilling, however if you have a heavy grilling plate, the ridges will make real grill marks on the fish, and that the result will be far better.
