Braised fish with pineapple
Recipe description
Braised fish is a rustic dish, which formed and attached with the reclaiming lives by rivers and fields of southern farmers. The braised fish pot can be used for several days, as the more being stewed, the fish is more soften and infused. In spite of the different way of cooking through regions by the several of additives and spices, but overall, the dish is the golden brown fish steak, softly odor, spicy absorbed, and well suited with rice in rainy days.
Braised fish eases the homesick of those who are away from home, it connects the Vietnamese expatriate communities in Tet holiday, and now, it is an indispensable ingredient in Vietnamese fine cuisine at restaurants.
Tuna is rich in protein with firm fresh meat, which is more preferable for braised dish. Besides, marlin, mackerel, scad fish are also suitable choices.
Ingredients
Serving size: 4
1 lb tuna steak
1 200-gram pineapple
2 green pepper
2 red chili
2 tomato
handful of coriander
1 onion
Seasoning: scallion, garlic, salt, vegetable oil, seasoning powder, sugar, fish sauce, ground pepper, MSG
Directions
Tomato, green pepper, onion halves: chopped into quarters
Red chili: finely chopped
Onion halves: finely chopped
Pineapple: chopped into quarters, then slide
Coriander: chopped in 1-inch length
- Pour 2 tablespoon fish sauce over fish steak, season steak with seasoning powder, chopped red chili, and onion. Leave to marinate evenly in 30 minutes.
- Heat 1 tablespoon vegetable oil in a pan, then stir-fry some chopped onion
- Stir fry tomatoes until soft with nice colors
- Add fish steaks, pineapple, green pepper, cook in light heat.
- Add a small cup of water, seasoning powder, MSG, sugar, ground pepper to taste.
- Keep cooking in light heat until the broth run half.
Serve
- Put fish steak and pineapple on a white plate.
- Top with ground pepper and coriander.
- This dish and hot rice can make a good combination.

- Fish steaks can be stir fried before braised. They are firm with light brown, and might not be crumbled during cooking.
- Simmer fish to saturate all spices, and water, at which the broth will mix with pineapple juice to create an appealing scent.
